For over 100 years, we have been producing London Cure Smoked Salmon, earning a reputation for excellence that is trusted across the industry.

We produce and source only the finest products, including wild salmon from the River Tweed, sablefish for premium black cod dishes, fresh shellfish, caviar, and tuna direct from the Indian Ocean. The Forman’s label is synonymous with quality, trusted by chefs, caterers, and hoteliers alike.

Our weekday London delivery service, operated by our own tracked and refrigerated fleet, ensures your order arrives within hours of production. As a family business, we take immense pride in offering a truly personal service that is attentive, responsive, and reliable. LONDON CURE SMOKED SALMON

We have been creating the London Cure since 1905. We only use rock salt and oak smoke, nothing else. Made with Grade One Scottish farmed Salmon, River Tweed Wild or Alaskan Wild, the cure is light, letting the wonderful taste of salmon shine through. It is deliberately subtle so you can savour the taste of the melt-in-the-mouth premium fish. Our gravadlax, available in flavours such as gin & tonic, beetroot, and wasabi, remains a perennial favourite.

All salmon is prepared to your individual specification and we will work with you to find the best fit for your business.

Beyond seafood, our production kitchen creates a diverse selection of pre-prepared dishes, from fish cakes and lobster thermidor to beef wellington, buttermilk chicken, mulled pears, and chocolate brownies. Every product is made to order and tailored to your exact requirements, whether you need three fish cakes or three hundred, 50g or 100g paupiettes, scotch eggs with hen or quail eggs. Nothing is mass-produced; flexibility and craftsmanship are at the heart of everything we do. Think of our kitchen as an extension of your own. London cure Smoked Salmon has the prestigious Protected Geographical Indication (PGI) status. This places it alongside renowned products such as Champagne, Parma Ham and Gorgonzola, offering a recognised mark of authenticity and origin.  Notably, it is the first smoked salmon to receive this distinction, and the first London-produced food or drink to achieve such accreditation.

For fine food retailers, partnering with us offers more than an exceptional product.  It provides a compelling story your customers can trust and engage with – heritage, provenance, and craftsmanship that stand out on any counter.  Our PGI status offers a unique point of difference, reinforcing authenticity in a market where consumers increasingly seek transparency and quality.

Delivery within London is via our fleet of refrigerated vehicles.  For delivery outside of London we offer an overnight courier service using export grade packaging to transport your order.

Smoked Salmon

Our retails packs start at 100g, but as a bespoke producer we can offer pack sizes of your choosing. Choose from our white or black packaging, or select the convenience pack – 5 x 100g packs on one handy box – perfect for the freezer.

We believe it is important that you and your customers get exactly what they are looking for, which is why we offer you the option to choose lean, fatty, D-Cut or Classic long sliced salmon for your packs.

Included in this range is the Royal Fillet of Smoked Salmon, the ultimate gourmet expression and possibly the nicest food you might ever eat.

The jerky and pellicle are made from the smoked salmon trimmings, providing exceptional value, and continuing our commitment zero waste with to ‘nose to tail’ eating of the whole fish.

 

Cured Salmon

Gravadlax, or gravlax if you prefer, is cured rather than smoked. It is a traditional Scandinavian approach of preserving fish in a mixture of salt and sugar; ‘grave’ (to bury) + ‘lax’ (salmon) = gravadlax. We have an extensive range of flavours, the most popular are the classic dill, beetroot and wasabi.  For the indecisive, there is the pack containing a selection of all three flavours.

 

Smoked Fish

Our smoked fish range is as extensive as it is delicious.  Something for every smoked fish lover.  Our smoked tuna is delicious drizzled with olive oil and served with capers and shallots, the smoked mackerel is the perfect oily fish, full of Omega 3’s, and available plain or peppered, or choose our G&T smoked salmon, the perfect treat to invoke thoughts of balmy summer days. The Restaurant Collection

Our restaurant collection is perfect for your discerning customers. The range includes gourmet fishcakes – perfect for mid-week suppers, or delicately prepared paupiettes and black cod in miso that make entertaining a doddle.  Each product is made with the same high quality ingredients and attention to detail as our smoked salmon.
