THE MAN WHO BEAT GORDON RAMSAY

And holds a World Record to prove it

Most people can barely slice a bagel without incident. Darren Matson can bone and slice an entire side of smoked salmon in 1 minute and 24 seconds.

The record that made Gordon Ramsay lose

On July 11, 2012, Darren set the Guinness World Record for fastest time to bone and slice a smoked salmon on ITV’s “Let’s Do Lunch with Gino and Mel.” And also? He beat Gordon Ramsay in a head-to-head salmon carving competition.

Picture it: One of the world’s most famous (and intimidating) chefs versus an East London artisan. Ramsay’s got the Michelin stars, the TV empire, the reputation. Darren’s got a knife, a salmon, and decades of muscle memory.

Spoiler: The artisan won.

What makes 1 minute 24 seconds so insane

Here’s what Darren had to do to qualify for the record: Remove every pin-bone by hand. Slice the entire fillet with a minimum of 40 slices. Make every slice uniform weight. And somehow do it in under 1 minute and 34 seconds.

Most people can’t even find all the pin-bones, let alone remove them while the clock’s ticking.

Darren’s knife moves so fast and so precisely that watching him work feels like watching a master calligrapher. There’s no hesitation, no correction, no wasted movement.

When you realize all the precision it takes to qualify for the Guinness record, you understand what an amazing achievement it is.

This isn’t just speed. It’s speed with surgical precision.
