Salmon
is the oldest gourmet food known to man. Throughout the ages this
magnificent 'king' of fish has adorned the table of many a royal
feast and banquet. The curing and smoking of salmon are crafts taking
years to master and at H.Forman & Son, we take pride in maintaining
the excellent traditions of Salmon, so that our Genuine
Wild Smoked Scottish Salmon from the River Tay has become
justly regarded as the world's finest.

Founded
in 1905, the award winning H.Forman & Son is a family business
now in its fourth generation and the UK's oldest established salmon
curer. Using only the finest specimens and combining this with nearly
a century of expertise, we can work to the exacting specifications
of the most discerning clientele. By nurturing our clients, H.Forman
& Son has grown into the market leader for finest quality Smoked
Scottish Salmon, supplying most of London's leading hotels, clubs
and gourmet food halls as well as exporting its product to five-star
establishments across the globe.
OUR
PLANT
Our
state-of-the-art plant in East London was expanded in 1999 to meet
increased demand for our quality products. The doubling in size
of the factory was officially opened by the Minister for Food. The
plant is modern and hygienic and meets all the EU regulations for
salmon processing.
Being
located close to central London ensures our clients receive their
products fresh with each day's order. Our smoked salmon is removed
from the smokeholes at 4.30 am and by mid morning is in most of
London's top kitchens ready for savouring by their diners and guests
later that day. We are also excellently located for easy shipment
by air across the globe and refrigerated truck into Europe.

To
achieve the finest quality smoked salmon we ensure that only the
very best and freshest raw products are used. As well as smoking
superior farmed Scottish salmon we are Britain's leading smoker
of the Genuine Wild variety, which we process consistently
throughout the year.
Our
cure is traditional; a mild London Cure which enhances
the natural and succulent flavour of the Salmon rather than concealing
it as many modern smokers are prone to do. Whilst our techniques
have been modernised our traditional cure and original recipe is
the same as that brought to Britain by our founder Harris (Aaron)
Forman from Eastern Europe at the turn of the century. Our quality
is recognised by renowned chefs around the world and we are honoured
to be associates of the highly acclaimed Academy of Culinary Arts.
UNBEATABLE
AND TAILOR MADE SERVICE
Understanding
the needs of our clients means being able to react at short notice
and often prepare product to the chef's tailor made requirements.
We deliver our produce in London in refrigerated vehicles six days
per week and for exports we ship by air, so that even on the other
side of the world you can enjoy or finest Smoked Scottish Salmon
fresh on your plate within 48 hours of leaving our plant.
EXPORTS
Exports
account for thirty percent of our business. We supply through distributors
or direct (on a door to door basis) to clients in just about every
corner of the globe. From the USA to Italy, Hong Kong to Switzerland,
our superior quality is recognised by top chefs, gourmands and food
hall managers.
Prices
can be quoted on a door-to-door basis and we can either arrange
deliveries to your door or for collection at your nearest airport.
For regular shipments it is advisable to order more than 100Kgs
per shipment otherwise air-freight costs can become exorbitant.
